Fish Soup (Thailand)

Ingridients:

800 grams kind of big fish/ seafish.
200 ml oil
2.000 ml water/ stock
2 tablespoon ginger cut slice and soft.
4 tablespoon sugar
5-6 tablespoon fish sauce
6 tablespoon water of tamarind
2 tablespoon water of calamondin
6 leek, cut 2 cm
Coriander leaves chopped for adding on.

Cooking Spices

6 tablespoon the root of the coriander chopped.
2 teaspoon pepper.
12 red onions.
1 teaspoon salt
2 teaspoon terasi (= condiment made from pounded and fermented shrimp/small fish)

STEP 1: cut kind of big fish/seafish sized ½ X 2 X 3 cm, separate.

STEP 2: Heat the wok with oil, stir fry the cooking spices until aromatic, put the fish in, stir and lift up.

STEP 3: Boil water/stock in the pan, put in the ginger and fish, then stir fry.

STEP 4: Add the sugar, fish sauce, water of tamarind, water or lime fruit and onion leaves. Cook them until boil, then lift up.

STEP 5: Move the fish soup to the bowl, add on the coriander leaves. Serve it while it is hot.


Time: 45 minutes; For: 10-12 persons
